Using high-quality tea for the broth is the secret to delicious tea-infused rice. In Japan, if the tea isn’t good, making tea-soaked rice loses its meaning. By pouring premium roasted tea over perfectly cooked sushi rice, a blend of flavors emerges where the natural tea fragrance mixes with the sweetness of the eel-infused rice.

Today, we visited Kushida Shrine in Fukuoka. Conveniently situated between two subway stations, “Nakasu Kawabata Station” and “Gion Station,” it’s just an 8 to 10-minute walk from either station.

It’s not as bustling as Tokyo’s streets, but the relaxed vibe makes walking more enjoyable. I found some great deals here, like Kyushu tea leaves cheaper than in Fukuoka’s supermarkets!

Cover the tea leaves a month before harvesting to reduce sunlight exposure. After picking the white buds, they’re dried and rolled to create White Sencha with a sweet, seaweed aroma. Brew at low water temperature to avoid bitterness. 

Next to the discount store, there’s a tea-infused rice specialty shop downstairs. Your body knows what it wants to eat. After two days of indulgence, all I crave now is a simple bowl of tea-infused rice.

The interior of the shop is simple and comfortable, filled with Japanese office workers. It feels quite fresh to eat tea-infused rice at the counter seats! So, we chose seats in these two corners, with baskets under the chairs for storing personal items.

Arriving at Kyushu, known for tea production, this restaurant uses Kyushu Yame tea as the soup base, which pairs perfectly with eel dishes.

It’s said that during Japan’s Heian period, nobles used to eat steamed rice with hot water. In the summer, they switched to cold water. In “The Tale of Genji,” Kyoto nobles found tea-infused rice a soothing dish during the hot season when they lacked appetite.
